Owned by the US-based Mullen family since December 2017, the hotel re-opened in June 2021 after an extensive refurbishment as Ireland’s first and only Fairmont property and the oldest in the prestigious collection. Role:
- As Hotel Manager, you will you support the General Manager in the overall management and strategic direction of the hotel. You are responsible for the day to day operations of the Resort, including but not limited to Food and Beverage, Culinary, and Rooms Division.
- You will also ensure the hotel team turns guests’ moments with us into memories by delivering Fairmont`s service promise and the highest level of brand standards. You will be constantly aware of all on-going activities throughout the entire operation.
- Drive quality across the resort and inspire our team create extra-ordinary experiences for our guests clearly demonstrating to guests and colleagues a commitment to service excellence through the effective implementation and delivery of Fairmont Hotels & Resorts standards at all times.
- You will bring your expertise to support the day to day operational needs of the departments and assist in focusing on results, and optimising performances, ensuring profitability through providing strategic planning and inspirational leadership that creates a positive high performance and a highly engaged team and culture.
- Assume the responsibilities of the General Manager in their absence.
Guest Centric:
- Ensure that the guest journey is the main focus through the application of the Fairmont standards.
- Lead by example in developing high quality relationships with the guests, ensuring that all tasks relating to guest service, comfort or satisfaction are treated with utmost priority.
- Ensure guest satisfaction at all times by ensuring the delivery of high quality personalized and tailor-made services.
- Manage and motivate the HODs and talents to provide high quality services for guests.
- Has expert knowledge of the facilities, services and events offered by the hotel and the surrounding area and actively promotes them as well as all amenities and programs offered by the company.
- Analyze feedback and trends in guest satisfaction taking appropriate action to drive overall quality in the resort.
Operations:
- Guarantee through effective supervision that all services offered are always available, and are carried out with the utmost efficiency.
- Ensure through continuous evaluation that the team are fully aware of the operating standards, mystery audit criteria, making sure that spot checks and audits are in place and ensuring targets are met.
- Verify that on a daily basis all standards and procedures are adhered to.
- Monitor rotas to ensure effective coverage of the outlets with payroll in line with budget.
- Support the HODs in the management of the talents in the department, ensuring that the correct standards and methods of service are maintained.
- Maintain good working relationships with key players including other EXCOM, third parties including Accor Hotel Services.
- Ownership, membership and local community.
- Develop and update strategies and key objectives designed to enhance the F&B outlet’s performance and standards. Involves the HOD’s in strategy and concept development.
- Meet regularly with outlet managers & other HOD’s to review the operation of the department to ensure smooth coordination and communication.
- Ensure the department meets its quantitative and qualitative targets.
Talent & Culture Responsibilities:
- Lead by example on the principles of ‘Heartist’ and the Accor Values. Supports the on-going development and evolution of Heartist culture within Carton House a Fairmont Managed Hotel.
- Ensure all new talents are trained to brand immersion and service culture to consistently deliver the level of service expected and interact genuinely with the guest to turn moment into memories.
- Work in close collaboration with the Director of Talent & Culture to ensure that monthly one-to-one’s meeting, probation reviews and appraisals are conducted in a timely manner.
- Monitor the on-boarding of new talents to ensure they are positively welcomed and supported into the team.
Budgeting and Cost Controls:
- Have an understanding of weekly financial revenue targets, payroll costs to ensure optimum performance of each outlet.
- Monitor all costs and recommend measures to control them in accordance with the annual budgets.
- Lead and support all departments in the achievement of their financial and operational targets through establishment of a positive culture, clear expectations and policy & procedural implementation.
- Assist in the preparation, presentation and subsequent achievement of the hotel’s annual Operating Budget, Marketing &Sales Plan and Capital Budget.
- Ensure that monthly financial outlooks for Rooms and Food & Beverage are on time, on target and accurate.
- Ensure full compliance to Hotel operating controls.
Other:
- Support Accor`s commitment to Corporate Social Responsibility (CSR) through the co-ordination of strategic CSR activities at Carton House. Communicates and encourages the participation in CSR activities of all team members.
- Create an environment which promotes employee morale and encourages the team to have a pride in Carton House with a high level of commitment.
Experience & Qualities Expected:
- Previous experience in a similar role in a luxury setting, preferably a resort.
- This role suits an experienced Director of Operations looking to make the next step.
- A strong operations background with a strong focus on F&B experience required and Rooms experience preferred.
- An understanding of administration including, finance, budgeting, forecasting, human resources, revenue management and sales & marketing.
- Ability to create positive, appropriate, effective and sustainable working relationships with a diverse group of people at all levels in all circumstances;
- A proven leader with a keen entrepreneurial approach to hospitality.
- Project management experience is ideal.
- You will be somebody who is passionate about quality, service and attention to detail.
- A proven track record for driving performance and quality.
- A clear understand of luxury and the luxury guest.
- Great interpersonal and communication skills.
- Creative, positive, determined and an ability to think on ones feet and problem solve are some of the qualities expected.
